One of the great things about your online course catalog is the ability to use colorful visuals to help describe your courses.  An image can go a long way to helping consumers understand what "Twig Furniture", "One Stroke Paintings" and "Rag Time Quilts" look like.  The example below really helps the reader identify what a 'whimsical bottle topper' will look like.

But including a photo just for the sake of having a photo may not be the way to go, either.  What could you use for "Deer Cutting For Dummies" that wouldn't have a potential "yuck" factor?  How much excitement can a photo add for "Planning Your Will"?

Finding an appropriate photo takes some thought, too. A photo for a CPR class of someone breathing into a manikin could invoke thoughts of anything from germs to fear of doing the skill to someone being worried that they have bad knees and can't get down to the floor to perform the skill as shown.  In this case, including the logo from the American Red Cross or American Heart Association (depending on whose class you are offering) may be a better option- a simple, recognized, credible logo.

Photos can be a great addition to text, and help get people excited about a class.  Just be sure the photo is adding to, and not detracting from, the course's appeal.

Choosing Effective Photos & Images
Although directed at choosing images for a Web site, this is information that can easily be transferred to selecting images for course catalog descriptions- selecting images that add information, using faces in images, and selecting an images that mimics the feeling you're trying to convey. A 3-part article from Closed Loop Marketing, but well worth a read.
